🍇 Region: Dão (DOC)
🌱 Grapes: Touriga Nacional (45%), Jaen (20%), Alfrocheiro (15%), Tinta Roriz (5%), Tinto Cão (3%), Rufete (2%) and others (10%)
🛠️ Winemaking: Total destemming of the grapes and fermentation, followed by fermentation in stainless steel tanks with selected yeasts at 28–30 °C. 12-day maceration with gentle pump-overs.
⏳ Aging: In 225 L French oak barrels for 10 months. Bottling: Before bottling, the wine underwent only a light filtration through cellulose cartridges to preserve its integrity.
🧪 Analysis:
Alcohol content: 13.3% vol.
👃 Organoleptic Test:
- Color : dark and bright color.
- Aroma : pine needles, blackcurrant, vanilla, chocolate.
- Palate : complex, firm tannins.
⏳ Potential for Evolution: Suitable for bottle aging.
🍽️ Serving: Serve at 17°C.
