Bodegas Tradición, in Jerez de la Frontera, is dedicated to very aged Jerez wines and limited-production cognacs, with carefully selected batches and bottling.

🍇 Region: Spain, Andalusia, Jerez-Xérès-Sherry.

🌱 Grapes / Base: Palomino Fino.

🛠️ Winemaking: Initial aging under flor (flower leaves), followed by a long oxidative period, resulting in a dry and complex amontillado.

⏳ Stage: Prolonged maturation in American oak casks using the criaderas and solera systems.

👃 Organoleptic Test:

Amber color. Elegant aroma of hazelnut, toasted almond, dried flower, spices, iodine and fine wood. Dry, precise, saline, intense and very persistent on the palate.

🍽️ Serving suggestion: Serve at 10-12°C with consommé, mushrooms, artichokes, Iberian ham, cured cheeses, and poultry dishes.
