Bodegas Tradición, in Jerez de la Frontera, is dedicated to very aged Jerez wines and limited-production cognacs, with carefully selected batches and bottling.
🍇 Region: Spain, Andalusia, Jerez-Xérès-Sherry.
🌱 Grapes / Base: Palomino Fino.
🛠️ Winemaking: Complete fermentation and biological aging under a veil of flor using the traditional criaderas and solera systems.
⏳ Stage: Prolonged aging in American oak casks, preserving freshness, salinity, and dry character.
👃 Organoleptic Test:
- Golden straw color. Intense aroma of almonds, bread dough, dried herbs and saline notes. Very dry, lively, elegant and persistent on the palate.
🍽️ Serving suggestion: Serve chilled, between 7ºC and 9ºC, with Iberian ham, almonds, seafood, grilled fish, and savory tapas.
