Maceration with added carbon dioxide in a closed tank at low temperature for 24 hours. Alcoholic fermentation in stainless steel tanks for 10 days at 16-18ºC with gentle pump-overs. Gentle pressing midway through the alcoholic fermentation. Malolactic fermentation in stainless steel tanks. Frequent pump-overs for 6 months with lees stirring. Tasting Notes: Ruby-violet color. Aromas of fruits such as raspberry, blueberry, a touch of red pepper and eucalyptus. Very floral, aromas of bergamot and orange blossom. Smooth, fresh and very fruity attack. Round and very soft tannins. Serving Suggestions: Serve between 16ºC and 18ºC. Pairs well with red meat, game, poultry, and cheese dishes.
