    📝 Full notes: www.quintadomondego.com Munda Jaen Grapes 100% Jaen Winemaking Hand-harvested at optimal ripeness. Gentle crushing and destemming. Cold maceration for 24 hours. Alcoholic fermentation in stainless steel tanks for 8 days at 16-18ºC. Sulfur dioxide added after alcoholic fermentation. Aged in 500L used French oak barrels for 12 months. Tasting Notes Ruby red color. Aromas of fruit, black pepper and vegetables. Smooth, fresh, fruity and balsamic attack. Easy and very smooth tannins, with a long finish. Pairs well with Game meats and creamy cheeses. Serving temperature 15-17ºC. Analysis Alcohol content 13.1% pH 3.71 Total Acidity 4.48 g/L tartaric acid Total Sugar 1.5 g/L Production 1,100 bottles
