Total maceration process with spontaneous alcoholic fermentation, total stem contact with the skins for 22 days. Gentle pressing. Aged in 500 used French oak barrels for 12 months with gentle batonnage. Gentle filtration before bottling. Tasting Notes: Straw color. Elegant and fresh bouquet, with abundant notes of toast, dried fruit, blending citrus and mineral notes with soft barrel notes. On the palate, very good body and perfect acidity, appearing at the end with more toasted notes. Long and persistent. Serving Suggestions: Serve between 12ºC and 14ºC. Pairs well with fish dishes, cod, and soft cheeses.
