Gentle pressing to separate the must from the skins, properly protected from oxidation. Static decantation at low temperature for 24 hours. Fermentation in stainless steel tanks of both varieties in temperature-controlled stainless steel tanks. Aging for 6 months in stainless steel tanks with lees stirring. Tasting Notes: Citric yellow color. Aromatically intense and fresh. Vegetal notes, dry notes, some white fruit and even a mineral component. On the palate, balanced acidity, a dry attack, and good volume. The intensity of flavors is dominated by the freshness of citrus and minerality. Serving Suggestions: Serve between 10ºC and 12ºC. Pairs well with fish dishes, seafood, salads and white meats.
