Quinta dos Penassais Late Harvest 2016 Dão White Wine 50cl

Late harvest white wine from Quinta dos Penassais, an elegant fortified wine that showcases the richness of the white grape varieties of the Dão region.

🍇 Region: Dão

👨‍🔬 Winemaker: Eng. José Carlos Oliveira

🌱 Grape varieties: Encruzado, Malvasia-Fina (Arinto do Dão) and Bical.

🛠️ Winemaking: Late manual harvesting, with overripe grapes, transported in 15 kg boxes. Destemming and pressing in a pneumatic press, controlled fermentation at low temperature in stainless steel tanks.

⏳ Aging: Natural aging in 225L French oak barrels for approximately 6 months, followed by stabilization in stainless steel and bottle aging.

🌿 Vineyards: Vineyards on the right bank of the Dão River, mid-slope in São João de Lourosa, with southern sun exposure.

🧪 Analysis:
Alcohol content: 14.5% vol.

👃 Organoleptic Test:
- Color: Citrine with subtle golden reflections, very bright.
- Aroma: Intense fragrance of overripe fruit, with a delicate touch of French oak.
- Palate: Sweet, smooth, with good body and low, but balanced acidity, enhancing the aromas from the nose in the mouth.

⏳ Potential for Evolution: Expected longevity of several years in a good cellar, evolving towards greater complexity.

🍽️ Serving: Serve between 10ºC and 12ºC, perfect as a dessert wine, with traditional convent sweets, blue cheeses or spicy Asian cuisine.
