Unfiltered white organic wine, with great texture and tension, with a natural and deeply gastronomic approach.

🌱 Varieties: Bical (100%)
🛠️ Winemaking: Fermentation with skin maceration (after destemming) and pigeage in an open lagar for two weeks. Chestnut blossom is used as the sole preservative. Pressing in a basket press.
⏳ Stage: Partial aging in a barrel (oak) and partial aging in an amphora, until natural stabilization.
🌿 Vineyards: Óis do Bairro vineyard on Jurassic limestone soils, with a strong Atlantic influence.
🧪 Analysis:
- Alcohol content: 11.5% vol.
- Total acidity: 6.9 g/L
- Total sugar: 0.7 g/L
- Contains sulfites: No (only chestnut flower petals)
👃 Organoleptic Test:
- Color: Intense straw yellow with good viscosity.
- Aroma: Mineral and smoky, with floral and orchard fruit notes.
- Palate: Creamy, with intriguing minerality and great length.
⏳ Potential for Evolution: Evolves very well in the bottle over several years.
🍽️ Serving suggestion: Serve chilled (12–14 ºC) in a wide glass.
🍽️ Pairing: Smoked fish, raw seafood with lemon, mushroom dishes and roasted poultry; strong cheeses.
