Description
An "anti-vintage" sparkling wine of enormous depth, created from a historic base batch and aged for a long time before reaching the table.
🍇 Region: Bairrada
👨🔬 Winemaker: Filipa Pato & William Wouters
🌱 Varieties: Baga, Bical and a small percentage of other indigenous varieties.
🛠️ Winemaking: Hand-harvested and very gentle pressing. Fermentation in traditional vats with indigenous yeasts and indefinite aging in barrels. Special blend based on historical characteristics and further aging in large barrels before the second fermentation in the bottle (classic method).
⏳ Aging: Long aging in the bottle (minimum 18 months) after the second fermentation, resulting in complexity and tension.
🌿 Vineyards: Jurassic clay-limestone soils, exposure to springs and strong Atlantic influence.
🧪 Analysis:
- Alcohol content: 11.9% vol.
- Total acidity: 5.9 g/L
- Total sugar: 2.4 g/L
- Contains sulfites: Yes
👃 Organoleptic Test:
- Color: Light gold, fine and vibrant bubbles.
- Aroma: White flowers, ripe and dried citrus fruits, licorice, marzipan, and spices.
- Palate: Very complex (dried fruit, brioche, candied orange peel), mineral and fresh, with a persistent finish.
⏳ Potential for Evolution: Can be consumed now; benefits from some time in the bottle, maintaining great tension.
🍽️ Serving: Serve at around 10ºC; decanting is possible to reveal its full complexity.
🍽️ Pairing: Complex seafood, scallops, lobster, fine fish and white meats; excellent with cheeses due to its acidity.
