Description
A highly precise extra brut sparkling wine, made using the traditional method and with a total focus on the natural freshness of the grapes.
🍇 Region: Bairrada
👨🔬 Winemaker: Filipa Pato & William Wouters
🌱 Grapes: Bical (80%), Maria Gomes (9%) and Cercial (11%)
🛠️ Winemaking: Hand-harvested and very gentle pressing. First fermentation in vats with indigenous yeasts and second fermentation in the bottle (classic method), without dosage.
⏳ Aging: Minimum aging in bottle on fine lees (9 months).
🌿 Vineyards: Marked Atlantic influence and clay-limestone soils of Jurassic origin.
🧪 Analysis:
- Alcohol content: 11.5% vol.
- Total acidity: 5.6 g/L
- Total sugar: < 0.6 g/L
- Contains sulfites: Yes
👃 Organoleptic Test:
- Color: Clear straw yellow with fine bubbles.
- Aroma: Mineral profile with a smoky touch, pear and dried herbs.
- Mouth: Creamy, very dry, mineral and refreshing, long and intense finish.
⏳ Potential for Evolution: Consume young for freshness; tolerates short aging.
🍽️ Serving: Serve at 8–10 ºC in tulip-shaped glasses.
🍽️ Pairing: Excellent as an aperitif and with seafood, poultry, salads, and aged cheeses.
