A white wine, organic and biodynamic, from a historic vineyard, precise and mineral, with remarkable persistence and a high-end gastronomic profile.

🌱 Varieties: Bical (100%)

🛠️ Winemaking: Hand-harvested in small crates and gently pressed. Spontaneous fermentation with indigenous yeasts in traditional casks. Prolonged aging on fine lees without bâtonnage; unfined and unfiltered.

⏳ Aging: Long aging on fine lees and further aging before bottling, followed by bottle resting before release.

🌿 Vineyards: Old vineyards (some over 60 years old) in Jurassic limestone soils, with southern exposure. Limited production and organic and biodynamic viticulture.

🧪 Analysis:

• Alcohol content: 11.5% vol.
• Total acidity: 6.5 g/L
• Total sugar: < 1.5 g/L
• Certification: Organic (Certiplanet) and Biodynamic (Demeter)
• Contains sulfites: Yes

👃 Organoleptic Test:

• Color: Bright pale yellow.
• Aroma: White flowers, peach blossom, pear, honey and toasted almond.
• Palate: Silky and harmonious, very mineral, long finish with acidity providing tension.

⏳ Potential for Evolution: Excellent guarding ability (more than a decade).

🍽️ Serving: Serve at 10–12 ºC; when young, it may benefit from decanting.

🍽️ Pairing: Fine fish in sauce, scallops, lobster, poultry in creamy sauce, and dry goat cheeses.
