🌱 Grapes: Baga (87%) and Bical (13%)

🛠️ Winemaking: Traditional method with secondary fermentation in the bottle. Unfiltered and unfined to preserve flavor and bubble quality; no dosage.

⏳ Aging: Aged in bottle on fine lees (9 months).

🌿 Vineyards: Clay-limestone soils of Jurassic origin, with a strong Atlantic influence.

🧪 Analysis:

• Alcohol content: 11.5% vol.
• Total acidity: 5.5 g/L
• Total sugar: < 0.6 g/L
• Contains sulfites: Yes

👃 Organoleptic Test:

• Color: Light salmon, with fine bubbles.
• Aroma: Strawberries, pomegranate and anise.
• Mouth: Creamy, mineral and very dry, with a fresh and persistent finish.

⏳ Potential for Evolution: Consume young for freshness; tolerates short aging.

🍽️ Serving: Serve at 8–10 ºC in tulip-shaped glasses.
