Description
A red wine from a very rare pre-phylloxera plot of vines, concentrated and elegant, designed for longevity and special occasions.

🛠️ Winemaking: Rigorous manual harvesting and selection. Partial use of whole bunches depending on the year. Spontaneous fermentation; careful extraction for about three weeks. Gravity draining and slow pressing in a basket press.
⏳ Stage: Prolonged stage in a traditional kite (18 months), followed by a long rest in a bottle before launching.
🌿 Vineyards: Century-old vineyards (over 150 years old) in shallow calcareous soils with red clay and pebbles, on a slope facing east.
🧪 Analysis:
- Alcohol content: 12.5% vol.
- Total acidity: 5.71 g/L
- Total sugar: 0.9 g/L
- Certification: Organic (Certiplanet) and Biodynamic (Demeter)

👃 Organoleptic Test:
- Color: Deep, intense, bright dark cherry with a purple rim.
- Aroma: Violet and strawberry in its youth; with time, enormous complexity and concentration.
- Palate: Lively yet polished tannins, vibrant acidity, and a long, elegant, and refreshing finish.
⏳ Potential for Evolution: Great potential for guarding (decades).
🍽️ Serving: Serve at 16–18 ºC; when young, decant in a wide-mouthed decanter.
🍽️ Pairing: Fine game, pigeon, duck, beef/veal fillet, veal, and rich, creamy cheeses.
