Colinas do Douro Quinta Extrema Ensaios Extremes Touriga Nacional 2020 Douro Red Wine 75cl

The Ensaios Extremes line originates from selected plots of Quinta da Extrema and seeks to interpret varieties in their pure form with great rigor and low production.

🍇 Region: Upper Douro, in plots at approximately 450 meters altitude.

👨‍🔬 Winemaker: Jorge Rosa Santos and Rui Lopes.

🌱 Grape varieties: Touriga Nacional.

🛠️ Winemaking: Hand-harvested in 20 kg boxes, cold maceration for 48 hours in stainless steel, and controlled fermentation for 7 to 10 days. Part of the malolactic fermentation takes place in new French oak barrels.

⏳ Aging: 18 months in barrels, some new and some used, followed by about 1 year in the bottle.

🌿 Vineyards: Best plots of this grape variety in soil that is a transition between granite and schist.

🧪 Analysis:

• Alcohol content: 14.4%
• pH: 3.71
• Total acidity: 5.6 g/L
• Residual sugar: 0.6 g/L

👃 Organoleptic Test:

• Garnet color.
• Aroma: red fruit, currant and a very subtle vegetal touch.
• Palate: fleshy tannins, delicate structure, high persistence and excellent balance.

⏳ Potential for Evolution: Excellent aptitude for storage, maintaining elegance and complexity over time.

🍽️ Serving temperature: Serve between 16ºC and 18ºC. Ideal with roasted meats, oven-baked dishes, game dishes, and aged cheeses.
