Colinas do Douro Quinta Extrema Ensaios Extremes Sousão 2019 Douro Red Wine 75cl

In the Ensaios Extremes line, each wine seeks to showcase the purest identity of a grape variety and a plot of land at Quinta da Extrema.

🍇 Region: Douro Superior, in vineyards at approximately 480 meters altitude.

👨‍🔬 Winemaker: Jorge Rosa Santos and Rui Lopes.

🌱 Grape varieties: Sousão.

🛠️ Winemaking: Hand-harvested in 20 kg crates, cold maceration for 48 hours in stainless steel, and controlled fermentation. Part of the process takes place in new French oak barrels.

⏳ Aging: 18 months in barrels, some new and some used, followed by about 1 year in the bottle.

🌿 Vineyards: High-altitude plots in transitional soils between granite and schist.

🧪 Analysis:

• Alcohol content: 15.0%
• pH: 3.69
• Total acidity: 5.2 g/L
• Residual sugar: 0.6 g/L

👃 Organoleptic Test:

• Color: intense garnet.
• Aroma: complex, with spices, forest notes and dark fruit.
• Palate: medium-high acidity, polished tannins, good breadth and a long finish.

⏳ Evolution Potential: Excellent guarding ability, with very interesting evolution in the underground.

🍽️ Serving temperature: Serve between 16ºC and 18ºC. Excellent with oven-baked meats, game, rich dishes, and aged cheeses.
