Founded in 2001 by Sandra Tavares da Silva and Jorge Serôdio Borges, Wine & Soul works with old Douro vines using a minimal intervention approach, seeking wines of great purity, concentration and elegance.

👨‍🔬 Winemaker: Sandra Tavares da Silva & Jorge Serôdio Borges.

🌱 Grape Varieties: Field blend of over 40 native grape varieties from Rio Grande do Sul.

🛠️ Winemaking: Harvested on September 22nd, with selected and unstemmed grapes, foot-trodden in lagar (traditional stone trough) and aged for 19 months in Port wine barrels.

⏳ Aging: Approximately 19 months in old port casks before bottling.

🌿 Vineyards: A 90-year-old vineyard with approximately 40 native Douro grape varieties.

🧪 Analysis:

• Alcohol content: 20% vol.
• Total acidity: 5.2 g/L
• pH: 3.62
• Total sugars: 100 g/L

👃 Organoleptic Tasting Notes: Impressive purple color, with fresh and intense notes of black plum, cassis, and dark chocolate; excellent concentration on the palate, freshness, and intense tannins.

⏳ Potential for Evolution: Total production is very limited, only 2,000 bottles of 75 cl.

🍽️ Serving suggestion: Ideal for special occasions and an excellent pairing for dark chocolate and medium to high intensity cheeses.
