Maceration with the addition of carbon dioxide in a closed, cold vat for 24 hours. Alcoholic fermentation in stainless steel vats at 14-16ºC with gentle pump-overs. Pressing after 4 days of fermentation. Addition of sulfur dioxide after alcoholic fermentation. Frequent pump-overs for 6 months to raise the lees. Tasting Notes: Ruby red color. Aromas of fruits such as strawberry and raspberry, red pepper and eucalyptus. Smooth, fresh and very fruity attack. Round and very soft tannins. Serving Suggestions: Serve between 14ºC and 16ºC. Pairs well with light red meat dishes, pasta, tapas, oily fish such as grilled sardines, and cold cuts. Can also be enjoyed on its own.
