👃 Organoleptic Test:
- Aroma & Palate: A grape variety found throughout the country, this variety adapts well to the Tejo region. Its ripening is later and it performs well in warmer temperatures. The best grapes are selected and macerated at low temperatures before being foot-trodden in traditional stone lagares. Subsequently, the wine spends 3 months in the Ovoide – a porous, egg-shaped tank – to allow micro-oxygenation. 30% of this wine aged for 4 months in new French oak barrels. Visually, an intense and vibrant purple; on the palate, plum, blackberry, and spices.
⏳ Potential for Evolution: Ready to drink, should be consumed within the first 5 years after bottling.
🍽️ Pairing: The ideal wine for barbecues and grilled red meats, as well as more complex dishes and tomato-based sauces.
