Wine from the volcanic terroir of Pico Island, grown in vineyards near the sea and protected by basalt stone enclosures, which impart a very characteristic minerality and salinity.

🛠️ Winemaking: Fermentation in stainless steel (80%) and in used barrels (20%).

⏳ Stage: 6 months on fine lees.

🌿 Vineyards: Vineyards on Pico Island, in volcanic soils and under the direct influence of the Atlantic, with traditional protection provided by basalt walls (corrals).

🧪 Analysis:

• Alcohol content: 12.5% vol.
• Total acidity: 6.58 g/L
• Total sugars: 0.375 g/L

👃 Organoleptic Test:

• Yellowish-green color.
• Aroma of citrus fruits with subtle gunpowder notes, in a distinctly mineral and volcanic profile.
• Elegant and refreshing on the palate, with pronounced salinity and a persistent finish.

⏳ Potential for Evolution: Good guarding ability, gaining complexity over time.

🍽️ Serving temperature: Serve between 10–12ºC. Ideal with raw fish, seafood, and Atlantic cuisine.
