🛠️ Winemaking: Hand-harvested in the early morning hours; total destemming and brief maceration. Spontaneous co-fermentation with indigenous yeasts in stainless steel tanks, where the wine ages for 8 months on fine lees.
⏳ Aging: 8 months in stainless steel on fine lees.
🌿 Vineyards: Granitic soil; hand-harvested in 20 kg boxes.
