The production philosophy, overseen by winemaker Maria Vicente, is based on the motto "Minimal Intervention, Maximum Attention," focusing on expressing the microclimate and identity of the region.

🌱 Grapes: Alicante Bouschet 35% Touriga Nacional 35% Trincadeira 25% Cabernet Sauvignon 5%

🛠️ Winemaking: fermented in stainless steel before undergoing a long and slow malolactic fermentation.

🧪 Analysis:

• Alcohol content: 13%
• Tartaric acid: 5.9 g/L
• pH: 3.63
• Residual sugar: 2.8 g/L

👃 Organoleptic Test:

• Aroma & Palate: These four varieties were co-fermented in stainless steel before undergoing a long and slow malolactic fermentation. This process allows for the complete harmonization of the varieties as a whole, with the best attributes of each working in synergy. 50% of the batch was aged for 10 months in used 500l French oak barrels. Notes of black fruit, truffles, earth and spices, a wine with smooth flavors and spicy tannins.

⏳ Potential for Evolution: Although in perfect harmony since its release, this wine will develop its full potential over the next 10 years and will reward those who can be patient enough to wait.

🍽️ Serving suggestion: A great wine for meats. A great wine for grilled meats such as lamb chops, red meats, or even a mixed Middle Eastern grill, characterized by the contrasting flavors of the spices.
