Produced by Hehn & Meireles in the Távora-Varosa demarcated region, with a second fermentation in the bottle using the traditional method.

🍇 Region: DOC Távora-Varosa

👨‍🔬 Winemaker: The producer (Marcos Hehn Pinto da Silva)

🌱 Grapes: 100% Pinot Noir

🌿 Vineyards: Vineyards located at an altitude of 700 m on a gentle southeast-facing slope. Soils derived from metamorphic schist series with quartz outcrops. Sandy-loam texture with some stoniness.

🛠️ Winemaking: Process: Harvested into 20 kg boxes, the grapes were gently crushed, without destemming, in a pneumatic press. Only the first fraction of the must was used, which was immediately pumped into stainless steel fermentation tanks where the base wine fermentation took place. The wine was subsequently bottled and placed in a cool cellar for the second fermentation according to the classic method. After aging in the bottle, the "dégorgement à la glace" was performed. Fermentation temperature: 16 to 20 ºC. Fermentation equipment: Stainless steel tanks with cooling jacket. Aging: Aging in stainless steel tanks.
