Description

Vinification

The grapes are harvested manually into small baskets and quickly transported to the cellar where, after a second selection, they are de-stewed and pressed. The must obtained is decanted for approximately 72 hours, followed by fermentation in stainless steel tanks at controlled temperature. Before the fermentation is completed, the must is transferred to oak barrels where this stage is concluded. Aged in barrels for a minimum period of nine months with regular batonage. At the end of this phase it is bottled.
