Description
The Monólogo line consists of single-varietal wines produced from our vineyards, all organically grown, and located between 190 and 540 meters above sea level. The aim of Monólogo is to convey, each year, the individual expression of each of these varieties and plots.

🛠️ Winemaking
The grapes arrive at the winery in 24kg boxes. They undergo manual selection followed by destemming, skin maceration, and gentle pneumatic pressing. The must ferments in stainless steel tanks at low temperatures. Light stabilization and filtration follow. No animal products are used in the process.
👃 Organoleptic Test
An expressive nose revealing white fruit and citrus, with a pronounced vegetal aspect typical of the grape variety. On the palate, it is vibrant, with acidity and minerality refreshing the whole, where notes of stone fruit and some tropical notes predominate.

🍽️ Service
Serve at 10–12ºC. Ideal to accompany oily fish, poultry and gourmet dishes.
