Description
The Monólogo line consists of single-varietal wines produced from our vineyards, all organically grown, and located between 190 and 540 meters above sea level. The aim of the Monólogos line is to convey, each year, the individual expression of each of these varieties and plots.

🛠️ Winemaking
The grapes arrive at the winery in 24kg boxes. They undergo manual selection followed by destemming, skin maceration, and gentle pneumatic pressing. The must ferments in stainless steel tanks at low temperatures. Light stabilization and filtration follow. No animal products are used.
👃 Organoleptic Test
The nose has a mineral profile, with hints of silica and dried herbs, such as thyme. On the palate, it combines the tension of the acidity, giving structure and precision to the whole, with floral touches and a light hint of pineapple, presenting several layers. It finishes long and elegant.

🍽️ Service
Serve at 10–12ºC. Ideal to accompany oily fish, poultry and gourmet dishes.
