Billecart Salmon
Billecart-Salmon was born in 1818, in Mareuil-sur-Aÿ, from the marriage of Nicolas François Billecart and Elisabeth Salmon. Louis Salmon, Elisabeth's brother and passionate about oenology, joined the project from the beginning, linking the family's commercial aspect to the work of making the wines. The Maison remains familiar and the seventh generation participates today in its continuity. Throughout its history, the house has deepened an identity oriented towards precision and quality. In 1958, Jean Roland-Bilecart started an important qualitative evolution. Later, the maison reinforced the winemaking by plot and caste with small thermoregulated deposits and recovered the work in wood, including hundreds of barrels and large foudres. This combination of family continuity, rigorous selection and technical evolution helps to explain the diversity of its cuvées, from Le Réserve and Le Rosé to Le Sous Bois and the vintage Champagnes. In 2018, Billecart-Salmon celebrated 200 years of family independence and know-how. The history of the maison remains linked to Mareuil-sur-aÿ and a philosophy transmitted between generations, with particular attention to the origin of the grapes, the detail of the winemaking and the time necessary to build the style of each champagne.
