✨ About the sparkling wine
Produced by Hehn & Meireles in the Távora-Varosa demarcated region, with a second fermentation in the bottle using the traditional method.
🍇 Region: DOC Távora-Varosa
👨🔬 Winemaker: The producer (Marcos Hehn Pinto da Silva)
🌱 Grapes: Touriga Nacional, Pinot Noir
🌿 Vineyards: Vineyards located at an altitude of 700 m on a gentle southeast-facing slope. Soils derived from metamorphic schist series with quartz outcrops. Sandy-loam texture with some stoniness.
🛠️ Winemaking: Process: The grapes, harvested in 20 kg boxes, were gently crushed, without destemming, in a pneumatic press, and the must was immediately pumped into stainless steel fermentation tanks, where the base wine fermentation took place. The wine was subsequently bottled and placed in a cool cellar for the second fermentation according to the classic method, and after aging in the bottle, the “dégorgement à la glace” was performed. Fermentation temperature: 15 to 17ºC (base wine) Fermentation equipment: Stainless steel tanks with cooling jacket (base wine).

🧪 Analysis:
- Alcohol content: 12.1% Vol.
- pH: 3.07
- Total acidity: 7.2 g/L tartaric acid
👃 Organoleptic Test:
- Color: Pinkish salmon color, medium and persistent bubbles.
- Aroma: An appealing nose of ripe red fruits such as currant and strawberry, complemented by delicate floral aromas of clove and honeysuckle, fresh mint, and light smoky notes.
- Mouth: On the palate it reveals light and complex fruit flavors and a pleasant lemon taste. Voluminous and round with the burst of bubbles making it long and persistent.
🍽️ Serving temperature: Serve between 8 and 10ºC
🥂 Gastronomy: To accompany meals, although it also works well as an aperitif, as it doesn't dry out too much and has a great freshness and smooth mousse.
