Red Doc Doc varietal made with pinot noir, with an elegant, fresh and balanced profile.
🍇 Region: Doc of the Tagus.
🌱 Castes: Pinot Noir.
🌿 Vineyards: Mediterranean climate, sandy-sandy soil and came with about 40 years.
🛠️ Vinification: Manual harvesting, total destemming, pre-fermentation maceration of 48 hours and fermentation in stainless steel at 23 ºC.
⏳ Stage: 6 months in French oak barrels.
🧪 Analysis:

- Residual sugar: <0.6 g/l
- Total acidity: 4.95 g/l

👃 Organoleptic test:
- Good concentration.
- Scents of blackberry, cherry, cassis and some spice.
