Van Zellers & Co Porto Reserva White 75cl

👨‍🔬 Winemaker : Cristiano van Zeller and Joana Pinhão

🌱 Grape Varieties : A blend of over 15 traditional white grape varieties from the Douro region, from both old and newer vines located in the Cima Corgo, primarily in the Murça district.

🛠️ Winemaking : Van Zellers & Co Reserva White Port is produced like a traditional White Port, and the winemaking method doesn't differ much from that of red grape Ports. All white grapes are foot-trodden before fermentation, along with 10% of the total volume of wine brandy, which is added at the end of fermentation. This process allows us to macerate the grapes at cooler temperatures and for a longer period before fermentation. When the must is ready to receive the brandy, fortification is done all at once by adding it to the must in the lagares (traditional stone vats). A little more foot-troddenness ensures good homogenization of the wine and stops fermentation. The mixture of must and brandy remains in the lagar for two more days, with very light foot-troddenness twice a day (10 minutes each time). You then collect and store it in vats along with the pressed wine (we use traditional presses). The wines are aged in very old wooden casks (over 100 years).

👃 Organoleptic Test
Van Zellers & Co. White Port has an intense nutty flavor, with dried apricots, plums, and raisins. Aging in old oak barrels for at least seven years makes it more complex and spicy. It is an ideal White Port to be served chilled as an aperitif or as a cocktail or long drink. Serve cold. It also pairs well with some sweeter desserts, such as almond tarts or crème brûlée.
