👃 Organoleptic Test:
- Aroma & Palate: Handmade is an appropriate name for this wine, as every stage of the production process, including harvesting, destemming, fermentation, and bottling, was done entirely by hand. It fermented with stems and skins for 270 days in a traditional 500-liter amphora before racking, followed by a month in French oak before bottling. This wine is a tribute to traditional techniques. It presents an incredibly clear and bright appearance in the glass, without any oxidative hues. On the nose, it reveals aromas of vibrant white flowers with hints of chamomile and fresh fruit. On the palate, it is complex and textured, rich yet precise and persistent.
⏳ Potential for Evolution: The wine will continue to develop in the bottle over the next three to five years.
🍽️ Serving suggestion: This is a very gastronomic wine that pairs well with a wide variety of fish, seafood, and rice dishes. Where it truly shines is when served with slow-roasted Iberian pork belly. Mmmm!
