World's First Alvarinho Wine Vinegar!
Cortinha Velha matured vinegar is made from Alvarinho wine, specially vinified to acetify, in second-use oak barrels. The barrels are adapted to allow correct aeration and optimal temperature so that the yeasts can transform the wine's alcohol into acetic acid. The entire process is handmade and natural.
Production
The wine is kept for several months in wooden barrels at a temperature that varies between 30 – 35ºC. During these months the wine acetifies and matures, becoming darker, amber, and acquiring woody flavors.
