Description
The Monólogo line consists of single-varietal wines produced from our vineyards, all organically grown, and located between 190 and 540 meters above sea level. The aim of the Monólogos line is to convey, each year, the individual expression of each of these varieties and plots.

🛠️ Winemaking
The grapes arrive at the winery in 24kg boxes. They are manually selected, followed by destemming, skin maceration, and gentle pneumatic pressing. The must ferments in stainless steel tanks at low temperatures. Light stabilization and filtration follow. No animal products are used in the process, and this wine is suitable for vegan consumers.
👃 Organoleptic Test
Aroma dominated by asparagus, green fruit, and white pepper. On the palate, it shows a delicate profile with notes of green bell pepper, floral aromas, and a light, refreshing bitterness.

🍽️ Service
