Quinta dos Carvalhais Touriga Nacional is a single-varietal wine, which presents itself as an excellent example of the noblest of the red varieties of Dão, being released only in years of exceptional quality. Quinta dos Carvalhais represents the best of Dão. Heir to ancient knowledge, she combines experience with innovation to create wines of great elegance, intense and delicate, which reflect the diversity and enormous potential of the region.

Such a charismatic wine, from Portugal's noblest red grape variety, can only be enjoyed by those who are satisfied with the best. The result of a long experience, Touriga Nacional repays the care given to it with the same calm, aging in bottle for many years.

Vinification

Grapes from 3 different fields of Touriga Nacional were used, and these were harvested separately. The grapes are unloaded from 20 kg boxes directly into the destemmer-crusher, falling by gravity into small stainless steel vats, equipped with automatic pumping over and temperature control. Here, the alcoholic fermentation took place for about 8 days, at an average temperature of about 27ºC. Touriga Nacional from one of the plots remained in post-fermentation maceration for another 20 days.

Maturation

This wine was aged for 12 months in new French barrels and used 225 liter barrels. The final batch was prepared with the aim of expressing the high quality of Touriga Nacional, as well as the unique characteristics of the Dão Region. The wine was subjected to light fining and filtration before bottling. In order to preserve its highest quality, it was bottled without cold stabilization treatment, which can cause deposit formation during bottle aging.
